Ingredients:
8 sheets of nori
2 cups of cooked quinoa (or rice)
2 tablespoons of rice vinegar
1 teaspoon of sugar
Salt
Assorted veggies like cucumber, carrot, bell peppers, avocado, sprouts, scallions, etc.
1/2 cup of sesame seeds
Wasabi and tamari (or soy sauce) for serving
Instructions:
In a small bowl, whisk together the rice vinegar, sugar, and a pinch of salt. Once the quinoa is cooked, place it in a large mixing bowl. Drizzle the vinegar mixture over the quinoa and gently fold it in. Let the quinoa cool for a few minutes.
While the quinoa cools, prepare your veggies by cutting them into thin strips.
Place a sheet of nori, shiny side down, on a bamboo sushi mat or a clean kitchen towel. Using wet hands, take a small handful of quinoa and press it onto the nori, leaving a 1-inch border at the top of the sheet.
Arrange a few strips of veggies on top of the quinoa, then sprinkle with sesame seeds.
Roll the sushi tightly, using the mat or towel to shape it and seal the roll. Repeat with the remaining nori and filling ingredients.
Once all the rolls are made, use a sharp knife to cut them into bite-sized pieces. Serve the rolls with wasabi and soy sauce for dipping.
